Curried Couscous with Heura® and nuts



For the couscous

  • 125 g couscous
  • 125 ml water
  • 1 Tbsp olive oil

To add to the couscous:

  • 300 g Heura® Bocados Originales
  • 40 g cashews
  • 20 g pine nuts
  • 40 g raisins
  • 1 onion, chopped
  • ½ red pepper, finely diced
  • 2 Tbsp extra virgin olive oil
  • black pepper
  • ½ tsp curry
  • chopped coriander for garnish
  • salt


  1. Add water and a Tbsp of olive oil to a saucepan and bring to a boil. When it starts to boil, remove from heat and add the couscous. Stir and set aside until the water has been absorbed.
  2. In a separate pan, add a Tbsp of olive oil and sauté the Heura over medium heat until brown on both sides. Remove from the pan and set aside.
  3. Peel and chop the onion and finely dice the red pepper. Add them to the pan with a Tbsp of olive oil and sauté.
  4. After a few minutes, add the cooked Heura, raisins, pine nuts, cashews and curry. Mix well and season with salt and pepper.
  5. Add the cooked couscous to the pan and mix well to combine everything and warm the couscous.
  6. Serve and garnish with chopped coriander or to taste.
