  • 300 g Heura® Bocados Originales
  • ½ grapefruit, juiced
  • 1 orange, juiced
  • 2 Tbsp soy sauce
  • 2 cloves of garlic, minced
  • a pinch of cayenne pepper
  • 150 g broccoli florets
  • 150 g cauliflower florets
  • ½ red pepper, chopped
  • 1 red onion, chopped
  • 2 carrots, cut into strips
  • 100 g various chopped nuts (hazelnuts, pistachios, cashews, pine nuts)
  • sesame oil
  • coriander for garnish
  • 3 Tbsp olive oil
  • salt
  • ice

  1. Combine the fruit juice in a bowl, then whisk in the soy sauce, cayenne pepper, garlic and olive oil. Add the Heura bites, mix well and let marinate in the fridge for at least 1 hour.
  2. Boil the broccoli florets for a few minutes in plenty of water. Drain, run through ice water and set aside.
  3. Wash the carrots and slice them into strips, then run them under ice water. Set aside.
  4. Toast the nuts in a non-stick skillet until crisp. Set aside.
  5. Heat the sesame oil in a pan. Add the onion and sizzle until translucent. Add the pepper and carrots and sauté for about 3 minutes over high heat.
  6. Add the marinated Heura and lower the heat slightly. Sauté for about 5 minutes. Stir in the broccoli and cook for another 2 minutes.
  7. Place the Heura stir-fry on a tray and garnish with nuts and a few sprigs of fresh coriander.
