Slice the peppers into strips and chop the asparagus into medium-sized pieces. Cut the courgette and lemongrass, making sure they’re not too thick.
Pour a splash of olive oil into a wok and brown the Heura® strips for 5 minutes. Remove the strips and set aside on a separate plate.
Lightly splash the wok with oil and wait until it is very hot. Add the asparagus and peppers and mix well. Cook for 1 minute and then add the courgette and lemongrass. Keep stirring so it doesn’t stick to the pan.
When the vegetables are golden brown, turn off the heat.
Put the Heura strips back in to heat them up.
Add the peanuts and sesame seeds. Top with finely chopped coriander to taste.
Pour a generous splash of soy sauce onto the stir fried Heura® and vegetables.
