Stuffed Aubergine with Ratatouille and Heura®


  • 90 g Heura® Bocados Mediterráneos
  • 1 aubergine
  • 1/4 green pepper
  • 1/4 red pepper
  • 1/4 onion
  • 1 tomato
  • Grated vegan cheese
  • Olive oil
  • Herbes de Provence
  • Salt


  1. Preheat the oven to 180ºC.
  2. Cut the aubergine in half and make a few cuts inside. Put in the oven for 12 minutes.
  3. Peel a tomato and grate it in a frying pan to fry it.
  4. Meanwhile, dice the onion, red pepper and green pepper. In a separate frying pan with a splash of olive oil, add the vegetables.
  5. When the vegetables have 5 minutes left to cook, add the Mediterranean bites.
  6. Remove the aubergine from the oven and let it cool (keep the oven on). Scrape the insides out with a spoon, chop it up and set aside. Set aside the skin of the aubergine to fill.
  7. When the vegetables and Heura® bites are golden brown, take out some Heura® bites to set aside. Cut the rest into small pieces so that it mixes with the vegetables. Add the fried tomato, aubergine pulp and Herbes de Provence. Mix well.
  8. Fill the aubergine skin with the vegetable mixture and top with the vegan cheese. Bake in the oven for 8 minutes so the cheese melts.
  9. Remove from the oven and add the previously set aside Heura® bites. Bon appétit!
